Instructions:
All you have to do is add this code to your theme’s functions.php file or in a site-specific plugin:
add_filter( 'woocommerce_countries', 'rename_ireland' );
function rename_ireland( $countries ) {
$countries['IE'] = 'Ireland';
return $countries;
}
